2005 My very first experience in the kitchen blossomed in a very intimate way with a project that I called "Todo Natural" a small catering Company that I started in Canary Island Lanzarote delivering weekly menus based on wholesome food , fresh local ingredients and a fragrant Mediterranean taste. I cooked those menus as an alternative option to the take-away fast food and soon start catering for parties and events. 2007 My experience cooking for Yoga Retreats started at Yoga Plus in Crete , Greece. I had the fortune to assist a vegetarian chef Udo Einkel learning from him about the benefits of a raw vegan diet. After a few months I replaced the second chef and started planning and cooking the menus for the retreat. I also started working with specific menus for gluten intolerance, diabetics , and various health problems. 2008 I felt the call to go to a big city restaurant and I chose Barcelona as my destination to search for a job. I got employed in a Vegetarian Organic Restaurant "Unicornius" right by the Rambla. My duty was to elaborate a big buffet of salads and cold dishes , three kinds of dessert and the soup of the day for an average of 150 persons per day. After one month I started as a second chef during the night shift elaborating more refined menu a la carte with a team of talented young chefs. In June I left Barcelona and moved to Southern Italy to take charge of the kitchen in the beautiful YIS Yoga Retreat hosting internationally renowned yoga teachers. 2009 Back to Barcelona for another intensive time in the kitchen as Main Chef at Dhamma Restaurant near Placa de Sants. Working as second Chef in Dublin for "Cafè Fresh"a lovely Vegetarian Restaurant, offering mainly mediterranean inspired food. 2010 The call from nature brings me to Crete again but this time into another international Yoga Retreat, in charge of the kitchen at Yoga Rocks. The funkiest kitchen so far! 2011 I receive the offer to restyle the menus for the Restaurant Atzavara in Barcelona with new recipes and tips. During summer time I am in charge of the kitchen at "Yoga Shala Breath Different" Yoga Retreat in Ibiza hosted by my good friend and teacher Marcello Leoni. The summer in Ibiza will be a must for the years to come! I also started my collaboration in September with the Eco Yoga Retreat in Scotland located in a beautiful natural setting hosted by a lovely family. 2012 The year started with a casual collaboration with the Restaurant " La Cucina di Giuditta" in the centre of Genova - Italy, cooking with a team of cooks and with the pleasure to work with organic fine seasonal ingredients with lovely recipes inspired by the local gastronomic tradition. During Summer I went back to YIS Yoga Retreat ,Yoga Shala Ibiza and Eco Yoga Scotland. 2013 Time for travel and study yoga. I needed to experience new food and try different culinary traditions. 2014 - 2020 Still cooking and enjoying it. Check the Events section on the web. |
